Unpacking the Growth in Per Capita Availability of Fresh Market Tomatoes

Per capita U.S. availability of fresh tomatoes averaged 20.7 pounds per year in 2010-17, up from 12 pounds in the early 1980s. The rise is attributed to growing imports, largely from Mexico; changing demographics and tastes; and emerging protected-culture technologies, including greenhouses and hoop houses, that extend the growing season.
